Food Service Manager - Yosemite

The Food Service Manager oversees the NatureBridge food service program in Yosemite. This includes ensuring that all aspects of meal planning, preparation, and service, both in-house with Yosemite NatureBridge and with concessionaires operating on contract with NatureBridge, are high quality, nutritious and desirable to NatureBridge's student and chaperone participants. This position reports to the Facilities and Food Service Director. Housing is not provided with this position.

Principal Duties & Responsibilities #

  • Oversees and assists with all operations in the lunchroom located in El Portal and the Crane Flat Kitchen.
  • Be accountable for meal planning, purchasing, and preparing, serving and storing of food within U.S. Public Health Service standards.
  • Assumes the responsibilities of the Lunch Coordinator when programs are running at 50% capacity or less.
  • Monitor and maintain kitchen inventory of food, portion control, equipment and supplies within an annual budget.
  • Plan menus and prepare meals, which are diet and nutritionally appropriate for all program participants and for NatureBridge's special functions.
  • Train, supervise, schedule and evaluate Lead Cook, Cook and Lunch Coordinator.
  • Monitor customer satisfaction by soliciting personal feedback and reviewing evaluations for each program and modify service where appropriate and reasonable.
  • Work toward implementing a food service operation, which is consistent with the mission and vision of Yosemite NatureBridge. 
  • Communicate with parents about participants' special dietary needs.
  • Work with the Facilities and Food Service Director to develop and meet the commitments of an annual budget with respect to food and labor costs, kitchen supplies and equipment.
  • Plan organize and order food for all overnight backpack trips and off-site programs.
  • As needed, plan, organize and provide food service for NatureBridge's special functions.
  • Provide for the regular and annual maintenance of all kitchen equipment and train all food service and dish washing personnel in the proper and safe use of equipment. 
  • Submit timely and accurate payroll information for food service employees, monthly food service statistics and physical food service inventory.
  • Perform inspections of concessionaire food service operations in accordance with our cooperative contract with the park concessionaire.
  • Review concessionaire contract, recommend changes in such contract, and assure compliance with contract.
  • Plan and create snacks and meals for NatureBridge's special functions.
  • Work with the national accounting team to pay all food service bills and monitor monthly expenses.
  • Able to obtain and maintain ServSafe Manager and Proctor certificate.
  • Assign and coordinate all ServSafe certifications for all staff that require it.
  • Maintain relationships with vendors and concessionaires.
  • Represent the food service operations at Yosemite Management Team meetings and all staff meetings.

Qualifications include:

  • Two to three years related experience and/or training; or equivalent combination of education and experience.
  • Supervisory experience in a food service setting.
  • Must be knowledgeable in the proper use of email and familiarity with Google Applications is preferred.
  • Knowledge and experience in preparing quality institutional meals for groups.
  • Can perform and complete assigned tasks.
  • Detail-oriented, self-starter and can work independently.
  • Exhibit a professional and a cooperative, friendly, flexible attitude.
  • Work and communicate effectively with others, especially under stress.
  • Valid driver's license and clear driving record required.
  • Ability to read and comprehend simple instructions, short correspondence and memos.
  • Ability to write simple correspondence.
  • Ability to effectively present information in one-on-one and small group situations to customers, clients, and other employees of the organization.

Working Conditions and Physical Demands #

The employee inside the kitchen is exposed to extreme heat and cold, wet and humid conditions, fire, boiling liquids, knives, moving mechanical parts, fumes and airborne particles, toxic chemicals, risk of electrical shock, in a confined area with other employees. The employee must be able to lift and/ or move up to 60 pounds. This employee will use culinary tools and equipment along with major kitchen appliances.
